With a background in agricultural engineering, and early experience on his family’s farm he now operates Finca El Balam, where he cultivates unique varietals at high altitudes. A former El Salvador Brewers Cup Champion and international judge he’s a key figure in advancing El Salvadors reputation in the specialty coffee world.
REGION &TERRIOR
A high altitude region of northern El Salvador known for its cool climate, mountainous terrain and rich volcanic soils. Sitting at 1350 meters near Cerro El Pital - the country’s highest peak - the farm enjoys misty cloud forest conditions that promote slow cherry maturation supporting the cultivation of exceptional varietals.
VARIETAL
Caturra-A compact, high yielding natural variation of the Bourbon variety, prized for its bright acidity, medium body, and sweet citrus forward flavor profile.
PROCESSING
Ripe cherries are carefully depulped while leaving the sugary mucilage intact, before slowly drying the beans. This method bridges the clarity of washed coffees with the richness and complexity of naturally processed ones.
